Ingredients:

- 1 bunch of fresh molokhia leaves, chopped

- 2 tablespoons olive oil

- 4 cups chicken or vegetable broth

- 1 tablespoon ground coriander

- Salt and pepper to taste

- Cooked white rice or bread, for serving

Steps:

 1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. 

2. Add the chopped molokhia leaves and stir for a couple of minutes until wilted.

- 3 cloves garlic, minced

- 1 tsp ground cumin

- 1 tsp ground coriander

- Salt and pepper to taste

Steps:

 1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.

 2. Add the minced garlic and continue to sauté for a minute or two.

3. Add the chicken or rabbit pieces and season with ground cumin, ground coriander, salt, and pepper. Cook until the meat is browned on all sides. 

4. Pour in enough water to cover the meat and bring the mixture to a boil. Reduce the heat, cover the pot, and let it simmer until the meat is tender (about 45 minutes to 1 hour). 

5. Add the chopped molokhia leaves to the pot and let them cook for an additional 10-15 minutes until the leaves are soft and the stew thickens.

- 1 whole chicken, cut into pieces

- 1 cup rice

- 1 teaspoon ground cinnamon

- Salt and pepper to taste

The Moroccan Molokhia with Lamb 

Ingredients:

- 1 lb lamb, cut into bite-sized pieces

- 1 bunch of fresh molokhia leaves, chopped

- 2 tablespoons vegetable oil

- 1 onion, chopped

- 3 cloves garlic, minced

- 1 teaspoon ground ginger

- 1 teaspoon ground cumin

- 1 teaspoon paprika

- 1 can (14 oz) diced tomatoes

- Salt and pepper to taste

- Cooked couscous for serving

Steps:

 1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened. 

2. Add the minced garlic and continue to sauté for a minute or two. 

3. Add the lamb pieces and cook until browned on all sides. 

4. Stir in the ground ginger, ground cumin, paprika, salt, and pepper. Cook for a few minutes to allow the spices to release their flavors.

- 2 tablespoons vegetable oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground allspice

- Salt and pepper to taste

- 4 cups chicken or vegetable broth

- Cooked white rice or bread, for serving

Steps:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.

2. Add the minced garlic and continue to sauté for another minute, being careful not to burn the garlic.
