Ramadan Iftar Menu: Day 26

Ground Beef Vegetable Soup + Kofta Meatballs with Cherry Sauce + Om Ali with Nuts


The Soup:

Ground Beef Vegetable Soup Recipe


What you will need:

1/2 kilo chopped mix vegetables (carrots, peas, potatoes, green beans, etc..)

1/2 kilo minced beef

1 cup mushrooms (chopped)

1 medium sized onion (cut as rings)

2 tbs minced garlic

1/2 tbs cinnamon powder

1/2 tbs cumin

1/2 tbs beef spices

Salt and pepper

2 Tbsp butter

2 Tbsp tomato paste

6 cups hot water

Steps:

1. Heat the butter then add the onions and garlic. When they start turning golden, toss in the mixed vegetables and stir well.

2. Add in the minced beef and mushrooms and stir for 10 minutes.

3. Put the cumin, cinnamon powder, beef spices, salt and pepper and mix them well with the meat.

4. Now it's time for the tomato paste and hot water to join the mix. Leave it on low heat until it starts to boil then remove the pot off the stove. Make sure that all ingredients are well cooked.

5. Serve your ground beef vegetable soup hot, and you can squeeze some lemon drops over it.


Main Dish:

Kofta Meatballs with Cherry Sauce Recipe


What you will need:

2 cups sour cherries (pitted)

1/2 kilo minced beef

6 Tbsp vegetable oil

1/4 tsp ground clove

1 large onion (finely chopped)

1/2 cup lemon squeeze

Salt and pepper

1/4 tsp nutmeg powder

1/2 tsp mix spices

1 tsp cinnamon powder

Steps:

1. Soak the cherries in a pot of water for 20 minutes. Make sure the water barely covers the cherries.

2. In a suitable bowl, mix the minced beef with the ground clove, nutmeg powder, mix spices, salt and pepper. You will find that it turned into a form of heavy paste or kneading.

3. Take small portions of the mixture and form them into meatballs.

4. Fry the meatballs in four tablespoons of oil. Make sure to flip them on all sides until they change in color and they're fully cooked. Set aside for now.

5. In a large frying pan, heat two tablespoons of oil and fry the chopped onion. Once they turn golden, add in the soaked cherries with the water they were in. Don't forget to add the lemon squeeze.

6. Cook the cherries for 10 minutes then add the fried meatballs. Leave on the stove for another 10 minutes, you will notice that the meatballs have absorbed most of the cherry sauce.

7. Serve the kofta meatballs cold with some white rice or even bread.


Dessert:

Om Ali with Nuts Recipe


What you will need:

5 slices of puff pastry dough

1/2 cup almonds

1/2 cup pistachios

1/2 cup raisins

1/2 cup coconut flakes

4 cups milk

2 cups sugar

200 grams cream

1 tsp vanilla

Steps:

1. Get a medium sized tray and rub the surface and sides with a few drops of oil. Spread the dough in it and place it in the oven until it's cooked. Set aside for now.

2. In a cooking pot, mix the milk, cream, sugar and vanilla together on medium heat until they are fully blended. Bring to a boil.

3. Place the nuts in a tray and put it in the oven to roast them. After you take them out of the oven, mix them with the coconut flakes.

4. In another tray, break the cooked dough to pieces and sprinkle the nuts on top.

5. Pour the boiling milk mixture over the dough and nuts. Make sure that the dough is fully submerged in milk.

6. Put the tray in the oven for 20 minutes, you will notice the surface taking a brownish color. Leave to cool down before being served. You can sprinkle more nuts and the raisins according to your preference.
